This Makhan is finally heated to obtain bilona ghee. The ghee so obtained is rich in butyric acid, amino acids, and vitamins A, D, K, and E, moreover, it is a lot lighter and healthier.

The other method of making ghee, which we must have seen our mothers following very often is the ghee we obtain from Malai or Cream-

So, what is used in this method is the thick cream that is collected at the top of chilled milk. This Cream or Malai is collected in a good amount and it is then heated until the reddish-brown precipitate separates from the golden ghee.Ā  You can now strain the ghee to separate it from the precipitate and it is all ready for use! This method however is not as effective as the bilona method because it is comparatively faster and sometimes in the process, we may not be aware of the right temperature. Due to this, ghee might lose its authenticity and several of the essential nutrients that give ghee its aroma and health benefits.
