Nothing makes an Indian meal more scrumptious than a spoonful of ghee. Ghee has been an integral part of an average Indian kitchen since time immemorial. Today, not just our fathers and grandfathers, but the modern dieticians too laud the many nutritional properties of Bilona ghee.

What is Bilona Ghee?

The traditional method of making ghee also known as the Bilona Method is quite popular since ancient times. Although the method is quite slow and manual, it is hailed for its umpteen health benefits, and its purest and most authentic taste.

Let’s decipher how this method works-

It begins with the boiling of desi cow or buffalo milk in order to remove the milk’s rawness and impurities. Thereafter, it is left to cool down until it is warm enough to make a curd out of it.

After it’s warm enough, the milk is poured into an earthen pot and a curd starter is added to convert it into curd overnight. The curd so prepared will be churned clockwise and anti-clockwise repeatedly, with the help of a wooden churner also called the bilona to obtain Makhan. This Makhan is finally heated to obtain bilona ghee. The ghee so obtained is rich in butyric acid, amino acids, and vitamins A, D, K, and E, moreover, it is a lot lighter and healthier.

The other method of making ghee, which we must have seen our mothers following very often is the ghee we obtain from Malai or Cream-

So, what is used in this method is the thick cream that is collected at the top of chilled milk. This Cream or Malai is collected in a good amount and it is then heated until the reddish-brown precipitate separates from the golden ghee.  You can now strain the ghee to separate it from the precipitate and it is all ready for use! This method however is not as effective as the bilona method because it is comparatively faster and sometimes in the process, we may not be aware of the right temperature. Due to this, ghee might lose its authenticity and several of the essential nutrients that give ghee its aroma and health benefits.

But why Bilona Ghee anyway-

  • Easy to Digest– The Ghee made from cream or malai is not as easily digestible as the one made from bilona method.
